ABOUT THE BEAN
From the highlands of Guji in Oromia, this Ethiopia Guji showcases the clean and elegant side of Ethiopian coffee. Fully washed and grown at elevations between 1,900 and 2,100 meters, it delivers a beautifully structured cup with delicate black tea notes, soft florals, and a gentle bergamot brightness. Light, refined, and quietly complex, the coffee reflects the regionβs reputation for clarity and balance, offering a smooth and refreshing profile with an SCA score of 86.75. It is a classic expression of Gujiβs terroir, where careful farming and precise processing come together to produce a cup that feels both vibrant and composed.
FARM STORY
This lot comes from smallholder farmers working with producer Biru Bekele and the Shakiso cooperative in Guji, where washed coffees reveal a different and more delicate side of the regionβs character. Cherries are selectively handpicked and depulped within hours of harvest, then fermented for 24 to 36 hours before being washed through multiple channels and dried slowly on raised beds for 10 to 14 days. The cooperative has spent years refining this process, investing in modern eco-pulpers, water recycling systems, and quality control to ensure clarity and sustainability. The result is a clean, expressive coffee that highlights Gujiβs floral aromatics, citrus lift, and tea-like elegance while reflecting the dedication of farmers who have carefully nurtured this land for generations.
